Château de la Haute Borde is delighted to announce the residency of Manon Bails .bails from June 12 to 14, 2026.

For years, Manon worked between two worlds — shaping ideas and stories for brands, while cooking alongside. From time spent in the UK to a stretch in Sicily, from busy weekends in service to dinners in Brussels and Paris, her path has always led back to the kitchen.

Today, she cooks full-time, creating food for everyday life. Honest, intuitive, and quietly beautiful. Rooted in seasonal produce, her cooking draws from Hungary, Italy, and France — for one or for many, always meant to be shared around a set table.

Nous sommes ravies de recevoir Shan Rachel en résidence du 22 au 25 mai.
Le parcours culinaire de Shan a commencé en tant que rédactrice gastronomique, où elle s’est plongée dans les saveurs du monde et les cultures culinaires. Son chemin l’a ensuite menée à Paris, où elle s’est formée à Ferrandi et a travaillé dans des cuisines étoilées Michelin, avant de tracer sa propre voie — une cuisine comme forme d’expression, d’identité et de lien.
Cette année, Shan poursuit sa vision de célébrer la culture chinoise à travers sa cuisine et ses créations en céramique. Son travail est un dialogue — entre tradition et innovation, entre les cultures — et elle croit profondément que partager la nourriture est l’une des façons les plus belles et concrètes d’apprendre les uns des autres.

Shan Rachel will be joining us as chef resident May 22d to 25th.
Shan’s culinary path began as a food editor, where she immersed herself in global flavors and culinary cultures. Her journey led her to Paris, where she trained at Ferrandi and worked in Michelin-starred kitchens before carving her own path — cooking as a form of self-expression, identity, and connection.
This year, Shan continues her vision of celebrating Chinese culture through both her cuisine and her ceramics. Her work is a dialogue — between tradition and innovation, between cultures — and she deeply believes that sharing food across cultures is one of the most beautiful and tangible ways to learn from one another.
