2020 was our first year growing ginger & turmeric. Both crops take a long time to develop, but we’ve been very happy with the results 😊. The roots are crunchy and smooth, perfect for Winter smoothies 🧉🌱

Oxygen, heat and light. These three things start to steal nutrients from our fresh veg the moment it is harvested.

How much nutrition do we lose from when it is picked to when it lands on our plate?

A lot! As an example, the University of California studied the topic and found that vegetables can loose up to 55% of their vitamin C content within a week of being picked. Now, how old is that apple we buy in the supermarket?

According to an article in ‘Delish’ apples are often stored for 9-12 months before being sold. So what happens to our precious nutrients?? Mind blowing...

Maybe now is the time to start your own little veggie garden? Even a few tomato and basil plants on the balcony?

Take care of them and they will pay you with 100 percent nutrients. And what’s more important then our health?

We just received the official permission to put up our beautiful glamping tents for The Restoration Place retreat!
🥳😍🤩
Uncertainty can result in a lack of purpose, and difficulty finding focus for your work - we know this all too well...

It’s so important to find something you believe in, keep working towards it and not to lose hope.
⠀
In our situation it was risky as we were investing time and money in our place not knowing whether permission to start a retreat here would be granted by the Mayor.

Finally we got the green light!🚦

So happy we kept going even without clear sight of the finish line

Interesting bee fact! 🐝

If you’d asked my mates a couple of years ago what the likelihood was of my moving to the Pyrenees to open a yoga retreat and become an (amateur) bee-keeper, I’m pretty sure the answer would have been ‘zero’.
As life evolves so do our aspirations. A new bucket list reveals itself. Our understanding of the same events viewed with a different mindset...
If we’re lucky dreams become reality, but that only happens when we pay attention to what really makes us tick. So what is our purpose, our passion? What environment is conducive to our individual contentment?
Many people will tell you they have the answer, and they are all worth listening to, but for me it starts and ends with you. Your choices, your perception of circumstances. Ultimately your relationship with yourself.
So here it is, the latest manifestation of a dream. My dream but not necessarily yours...
