We could finally embark on producing our own lacto-fermented plant extract for phyto therapy. Here with Luzern. Its strongly reductive property helps to counter plant and soil oxidation. We used it when we watered our co-plantations. Eric Petiot method. We are grateful to Eric Pignal, the technical director of Domaine Simon Bize for the guidance and support.

Sampling young and old leaves to assess the vitality or the degree of oxidative stress in our vines, both biotic and abiotic. There are great tools to assess how helpful or efficient are the spraying agents of different types.

There’s so much seemingly helpful agents on the market. Or we can also concoct lacto-fermented plant extracts ourselves, but where to start and what to employ and when? These analyses are helpful guidance 🌱😌. Our heartfelt thank you to our mentors and friends !!

After 5 vintages at Chateau Grillet, Jaeok (we call her Jae) is back in Vosne Romanée as the technical director of Domaine d’Eugenie. For us who had many bottles of Maison des Joncs and so have long waited Jae ‘s return to Burgundy and to pinot noir, this is nothing short of excitement.

We didn’t expect anything less, still we are at awe of the beauty of her 2025s. We consider ourselves lucky to witness how Jae will continue to explore these celebrated appellations in years to come.

We purchased this waxing machine two years ago. It renders bottles more hermetic. We thought it would be a meaningful protection for our wines to which we add a little or no SO2. The challenge is to have wines accessible young and age worthy at the same time.
