Apple Crumble Choux Bun (slide 4), now on the House Menu at Rowan: whipped brown butter custard, green apple, Granny Smith gel, ginger and cinnamon crumb, caramel and apple sorbet. It's one of a couple of dishes featuring honey from our own hive, made by our native British Black bees and looked after by our resident beekeeper, Kian. Around 30kg has come off the comb so far this year, and it's lovely to see it finding its way onto the plate. Rowan is open to non-residents, so whether you're staying with us or simply popping in, the table's yours.

Meet the bees at Rothay Manor. Our bees are native British Black bees, looked after by our resident beekeeper, Kian. We currently have one hive in the garden, and so far this year it has produced around 30kg of honey, all of it taken off the comb. The bees feed mainly on the pollen from the flowers around the garden, so what ends up in the jar tastes of the grounds here.

Keep an eye out over the next few days to see where the honey turns up on the menu at Rowan.
