Forage time: Brambles are ripening early this year - have you ever made Bramble Gin?
We love bramble and apple crumble, or adding brambles to to cakes, but we have also tasted Bramble Cocktails which can include a Bramble Syrup. If you've never made it, here's a simple recipe for the cocktail and an idea how to make a bramble syrup if you don't have Crème de mûre (blackberry liqueur) :
50 ml (1.7 oz) Gin25 ml (1 oz) Fresh lemon juice15 ml (0.5 oz) Sugar syrup15 ml (0.5 oz) Crème de mûre (blackberry liqueur)Crushed iceFresh blackberries and lemon for garnis
If you do not have crème de mûre liqueur, why not make this blackberry syrup which is a perfect non-alcoholic substitute to drizzle over the crushed ice. Ingredients: 150g fresh or frozen blackberries, 100g sugar, 100ml water.
Step 1: Place the blackberries, sugar, and water into a small saucepan.
Step 2: Bring to a gentle simmer over medium heat, using a spoon or fork to mash the blackberries to release their juice.
Step 3: Simmer for 10 minutes until the liquid thickens slightly and turns deep red/purple.
Step 4: Strain the mixture through a fine-mesh sieve into a clean jar, pressing down on the fruit solids to get all the liquid. Let it cool.
