As the dust settles on our first week, we've had some time to reflect, refresh and re-evaluate - something we'll be doing every week to continuously evolve, grow and improve

We've had some wonderful feedback, and even more fantastic guests in our first week; we're so proud to have opened the doors and shared our restaurant with them

We're looking forward to opening our doors again tomorrow - and in exciting news, our 4 boutique guest rooms are opening tomorrow too! Link in bio for reservations for dinner and stays

Our location in the South Downs National Park is so important to us

Between all the paperwork and busi-ness of opening our first restaurant, we were foraging right on our doorstep.

In early April we went out as a family and started collecting Birch sap

We will be incorporating it in our opening menu; as a beautiful syrup, far more complex than it's cousin Maple, to dress our chocolate namelaka with brioche and white parsnip ice cream
