There is something I wanted to say for a long time.

Guests ask chefs for all sorts of things, in every cuisine, and they always will. But when a French chef declines to rebuild a sauce, the no is accepted. When a Japanese chef decides exactly how the fish should be served, it is called mastery. When a Nordic restaurant offers one set menu with no substitutions, it is called vision. In any cuisine the world takes seriously, the menu is the chef's point of view. All we ask is that Indian food be given the same understanding.

Our menu is not one curry sauce wearing eight disguises. Our butter chicken has its own strained tomato base, finished with ghee, butter and cream. Our prawn moilee is built on coconut milk and aromatic spices. Our lamb shank rogan josh is marinated overnight and slow cooked until tender. Our smoked aubergine is actually smoked, then folded into its own masala. Our dal makhani is black lentils simmered overnight with tomato, butter, cream and toasted spices. Time is its main ingredient. Different recipes, different regions, different techniques.

This is what Indian cooking is. Knowing when garlic should stay sharp and when it should disappear into a sauce. Knowing when a sauce needs butter and when butter would destroy it. That knowledge is the dish.

So if we ever say no to changing a dish, please know it is not about you. Each dish is already cooked, slowly and carefully, the way it is meant to be. Changed past a certain point, it would become a different dish altogether.

You do not have to love everything we make. Tell us what you enjoy and we will guide you to the dish that was made for you. That is a promise. Indian food is one of the great cuisines of the world. In our kitchen it is treated as one, and we would love to share it with you.
