FRIDAY, DECEMBER 15, 7pm

Meet Luciano, the proprietor of Lucho Bakes, originally born in Argentina he studied to be a pc hardware technician. He got his Spanish nationality and moved to Spain in 2008 where he studied networking. He lost his interest in computing and networking and moved on to practice martial arts, where he started to teach others for a while but he always liked cooking, especially Italian cuisine and loved making pizza dough.

Luciano fell in love with bread making. The simplicity yet very complex nature of sourdough bread kept him challenged. He gave bread to his neighbours, and they asked for more. One neighbour lent him a Sourdough book and another one said she wanted to pay to get two loaves and some crackers every week.

He started to invest money on more books and equipment and made his kitchen a little bakery right here in Barnstaple. Luciano spent hours and hours reading and researching and watching videos. He quickly improved his technique and that is how his journey as a baker began and Lucho Bakes was born.

SEASON FINALE TASTING MENU with WINE PAIRING
Canvas Restaurant located at Broomhill Estate
FRIDAY, DECEMBER 15, 7pm

Locally grown food and naturally fermented, I Am Cultured hand-make small batches of raw, unpasturised, fermented vegetables full of live cultures.

They use a ‘Wild’ fermenting process which means that they rely on the naturally occurring yeasts and bacteria on the veggies to ferment them. Not using water, vinegar or heat.

Their ferments are the ultimate slow food which take weeks to arrive at the perfect balance of taste and culture.

Tracey, the proprietor, says "Connecting with Elio at Broomhill's Canvas Restaurant has been an absolute blessing as he's actively encouraged my fermentation experiments, many of which have ended up on the menu. We also share a local, seasonal and low waste ethos. For example I created a burnt bread shoyu (a soy sauce) made from the restaurant's bread ends. When I make a fermented vegetable juice for the menu, the leftover pulp is turned into a miso and the rest is fermented then transformed, by Elio, into a flavourful dust for future menus. I really enjoy having a toolkit of traditional techniques that I can adapt to harness the most out of nature's bounty."

SEASON FINALE TASTING MENU with WINE PAIRING

FRIDAY, DECEMBER 15, 7pm

Venn Valley Vineyard is one of very few vineyards in North Devon. Until recently, England was generally thought to be too cool for wine-growing, but the vineyard lies on the same latitude as the great wine growing regions around Cologne in Germany. English wines are rapidly gaining an internationally recognised and well-deserved reputation for excellence.

Meet the proprietors Alina and Tony.
Alina studied Geography at Plymouth University, where she and Tony first met. Her professional work meant travelling and working in many places throughout the UK and internationally, bringing with it extensive experience in business administration and event management and organisation, skills that have proved invaluable in establishing and running the farm and vineyard enterprise.

Tony is a Chartered Mechanical Engineer, with a successful career in the oil and gas, water, marine, and Search and Rescue sectors – work that has taken him around the world. He is especially proud of the time he spent working for the RNLI, first as Senior Engineer in the Engineering Department and then being instrumental in the development of the RNLI’s first Inshore Rescue Hovercraft, which is now an established part of the life-saving charity’s fleet. He fondly remembers being one of the RNLI team that took on TV Channel 4’s Full Metal Challenge (World Champions) and a Scrapheap Mega Challenge (Winning team).
