Asparagus, with a little more to it than expected.

Spilman’s asparagus from James Nicklin at The Bloomsbury - one to begin the evening with.

Hand planted and picked in Sessay, Yorkshire, served with preserved winter truffle and 36-month aged Parmesan sauce, confit egg yolk purée, and pickled walnut ketchup.

Finished tableside with a warm asparagus velouté, poured over at the final moment to bring the whole dish together.

Now being served at The Bloomsbury, Wednesday to Saturday.

The menu says “to start”, but that hardly feels enough for this dish - Orkney Scallop - from James Nicklin at The Bloomsbury.

Hand-dived Orkney scallops from the coast of Scotland, pan-fried in their own dehydrated roe for a deeper richness, served with a Laksa sauce layered with fish stock, lemongrass, fennel, ginger, coriander and lime leaves.

Finished with raw fennel salad and dill oil, bringing another layer of freshness through this dish.
