Today, our Head Chef Iain Gourlay took to the stage at Meatopia Glasgow, one of the UK’s most celebrated live-fire cooking events - joined by our Junior Sous Chef, Odin Habedy, in support 🏴󠁧󠁢󠁳󠁣󠁴󠁿

In front of the live audience, Ian demonstrated a cannon of Scottish lamb, haggis stuffed belly, broccoli and ramson capers.

This dish is true reflection of his approach and ethos: letting provenance and quality lead the plate.

We are incredibly proud to see Iain representing Dalhousie Castle on such a respected stage, celebrating not only his craft, but the outstanding ingredients Scotland has to offer.

At Dalhousie Castle, we are fortunate to hold over 800 years of history within our walls, and to share it with those who stay with us.

We know that many of our guests visit to share that sense of connection – to the stories our castle has witnessed, the people who have visited, and the centuries of Scottish history that have shaped Dalhousie today 🏴󠁧󠁢󠁳󠁣󠁴󠁿

We are delighted to share that we are collaborating with local historian Max Muir to offer guided tours exploring not only the castle itself, but also the rich history of the surrounding area. From legendary battles and local folklore to myths, clans, and the events that shaped this corner of Scotland, these tours bring the past to life in a new and engaging way 💫

Based in Midlothian, Max has a lifelong passion for Scottish history, with a particular interest in Scotland's medieval past and the Scottish Wars of Independence. Having led history tours across Scotland and Northern England, he brings a wealth of knowledge and a storyteller's eye for detail to every tour.

A new addition to our guest experience, and a chance to explore Dalhousie Castle as it was meant to be felt: alive with story 🏰
