this week: Caught red-handed šŸæļø

Small, red and rather photogenic. One of our bushy-tailed residents was caught on camera by during a guided tour of our Red Squirrel Enclosure.

Notoriously quick on their feet and rarely ones to sit still for a photograph, this little character clearly knew how to work the camera.

The great & the green šŸŒ³

Two days, 100 of the UKā€™s leading head gardeners and a rather competitive round of topiary.

Now in its fourth year, our Head Gardeners Conference returned with Under the Canopy: The Future of Shrubs in British Landscapes. This year, we turned our attention to the humble shrub. Often overlooked, yet quietly providing the structure, character and biodiversity that hold our gardens together. With a changing climate calling for a little more resilience, there was plenty to discuss, debate and take back to our gardens.

Hosted by Arit Anderson and our Head Gardener, Harry, we welcomed friends from our partner gardens, sister estates and gardening communities from across the country and around the globe for two days of horticultural wisdom, shared ideas and good company.

Among the highlights, a wonderful conversation with Monty Don on the shrubs of the future, a collective effort to crown the Top 20, and the inaugural Topiary Takedown ā€” 15 minutes, a set of Niwaki tools and a little creative licence. Some rather impressive results!

A special thank you to Deepdale Trees for supplying our topiary, and to our friend Niwaki, co-founder of Niwaki, for keeping everyone suitably equipped.

Schoolā€™s out, and the great outdoors is calling.

October half term sees a refreshed programme packed with new activities for curious minds of all ages, encouraging our Newtlings to play, learn and explore, whatever the weather.

From Forest School and tree climbing to foraging, printmaking, lantern crafting and a little All Hallowsā€™ Eve mischief, thereā€™s plenty to keep everyone busy.

Apples were pressed, cyder was poured, tractors were boarded, music was played and a great many apples were bitten.

What a wonderful two days celebrating the humble apple. Thank you to everyone who came along and made it such a special weekend.

An Ode to the Prickly Pear šŸ

Apples may be having their moment, but thereā€™s another fruit deserving of a little affection.

Ripened in the warmth of the tunnels at Avalon Farm, our prickly pears have made their way from the garden into the hands of our chefs and bartenders.

A little sweetness, a little sharpness, and plenty of imagination. From Chalk Stream trout with prickly pear coulis, charred leek and blood orange Maltaise sauce, to a rather beautiful Pisco cocktail bringing together prickly pear, vanilla sourdough and a cloud of crĆØme fraĆ®che foam šŸø

The Best Vintage Yet šŸŽ

As this yearā€™s harvest gathers pace, we find ourselves looking back to the last. And with Apple Day just around the corner, there seems no better time to raise a glass to the fruit that keeps us rather busy for much of the year.
Ā 
2025 was a particularly good year in orchards up and down the country. And come October, a fine crop of Braeburns was ready for picking, pressing and the somewhat slower business of fermentation and maturation.
Ā 
The fruit of our labours? A new vintage of Wyvern Wing Cyder. Conceived more like a w**e than a traditional cyder, this yearā€™s bottle is more fruit-forward than its predecessors, with ripe stone fruit and exotic notes giving way to gentler citrus and a pleasingly crisp green apple finish.
Ā 
We think it might just be our favourite yet.
Ā 
So, hereā€™s to the apple and all the good things that come of it.
