Our beetroot and quinoa falafel are tasty bites of nutritional powerhouses! Quinoa is packed with fibre, plant-based protein and B-vitamins (in particular B2, B6 and B9). Both quinoa and beetroot have positive impacts on heart health and blood pressure.

We roast the beetroot first, with a little bit of garlic, carrots and onion, then combine with cooked quinoa, herbs and spices, before making into falafel shapes and baking again.

It was a glorious evening last night, with the sun setting in the west and high clouds in the sky. After a full day on the programme, with yoga, the walk, workshop and a relaxing guided visualisation, we were all ready for bed!

In our mindfulness workshop, we practice how we can let go of thoughts or mind-chatter. Like watching the clouds, or the dandelion fluff fly away, letting go of thoughts is a useful meditation practice, where we can learn to simply observe our thoughts, and not get caught up in them. There are many benefits to walking every day: improved cardio-vascular health, muscles build and maintain tone and strength, as well as supporting our lymphatic and immune systems. Walking in nature, with other people also enhances our mental wellbeing. Each day, you can take part in our guided walk, into the local area and enjoy being near the River Severn.
