I’m so annoyed with myself for missing the wild garlic season! My wild garlic salt is one of the best things I make, so useful and tasty.
But necessity in the mother of invention so I’m trying a new floral infused sugar instead. The lilac season is so short but they are looking and smelling incredible at the moment. The scent is quite citrusy I think so I’m planning a gorgeous lemon drizzle next weekend!
If you’ve got a lilac bush or pass one on a walk, you just need a couple of flower heads to pick the petals off and layer up with granulated sugar. Keep it somewhere dark and cool, after a week the petals will have dried up and infused their oils into the sugar.
