Wild garlic one month. Elderflower the next. Mushrooms later in the year.

The Forest is always changing, and that's part of the joy of foraging with Liz Knight. Every walk reveals something different.⁠

Spend the morning exploring the landscape around Tudor Farmhouse, learning how to identify the plants, herbs and flowers growing all around you, before sitting down to a seasonal lunch inspired by what the Forest has to offer.⁠

The Cottage Garden is starting to earn its keep.⁠

Courgette flowers, tomatoes, beetroot, herbs and leaves are all making their way from the garden into the kitchen as the season gathers pace. The hens, meanwhile, are carrying on as if they run the place.⁠

A walk through the garden tells you quite a lot about what's happening in the kitchen. Our chef sources as much as possible within 20 miles of Clearwell, other ingredients travel less than a minute from soil to plate.⁠

Summer tastes different when it's growing just outside the kitchen door.⁠

A lot of what makes a stay here memorable is the little details. A roll top bath waiting at the end of the day is definitely one of them. The small things that help you feel a bit more human again.⁠

Back in 2003, Hari and Colin left London for a former working farm in the village of Clearwell with a pretty simple idea: create the kind of place they’d always want to stay in themselves.⁠

Over the years, Tudor Farmhouse has slowly grown into the independent 20-bedroom hotel it is today. Good food, comfortable rooms, thoughtful details - the kind of countryside people come looking for when they need a couple of days away from normal life.⁠

Most days, you’ll spot Hari and Colin somewhere around the hotel. Chatting to guests over breakfast, recommending a favourite walk, checking in on dinner service or stopping for a chat in the garden.⁠

It’s still very personal to them. And we think that’s probably why it feels the way it does.⁠

Spring on the menu looks a lot like this.⁠

Chef Aaron and the team work closely with producers across the Forest of Dean and Wye Valley, building dishes around what’s actually at its best right now.

Two courses for £19.50 or three for £25.50 on our midweek lunch menu, it’s a very good excuse to disappear into the countryside for a few hours.⁠

Quietly one of the best lunches around, if we do say so ourselves.⁠

A few of our favourite spots for wild swimming within easy reach of the farmhouse:⁠

- Keeper’s Pond for cold water swims and mountain views⁠

- Llandegfedd Lake for open water swimming, paddleboarding and a very good lakeside coffee afterwards⁠

- Court Farm Lakes if you want somewhere close by and easy⁠

- Dragon’s Gate for quieter swims and slower afternoons⁠

All close enough to be back in time for a late lunch and a hot shower. ⁠We've shared all the details over on our blog for anyone planning an escape to the countryside while the weather lasts. ⁠
