- 60ml Isle of Barra Vodka (straight from the freezer)
- 10ml Extra Dry Cocchi Vermouth
- 2 drops saline solution
- Stir vigorously
- Strain into a frozen Nick & Nora Glass
- Olive or twist to garnish

Cromarty Firth Lobster, Hand Rolled Linguine, Pickled Girolle Mushrooms & Chives.

A summer special as explained by Matt, our head chef…

🦞 “We use the freshest of lobster caught by our local fisherman, Tommy. They’re caught in the morning and delivered to us the same day. The lobster tails are blowtorched, de-shelled and then prepped. They are then vacuum packed and gently poached in a rich oil made from their shells and Scottish rapeseed oil.”

🍝 “We hand roll our pasta, mixing the coral from the lobster with the eggs to create a dough which starts green but turns luminous orange when cooked. The linguine is served with a light, fragrant cream made from the lobster heads and infused with chilly, ginger and white wine.”

🍄‍🟫”The Girolles are foraged by Nasi (our bartender) in the Culbokie woods - these are lightly pickled to bring some acidity to the dish.”
