Managed to catch the last of the Autumn colours visiting , with the dogs yesterday, celebrating my lockdown birthday. One of our favourite walks. I love that the arboretum is so dog friendly and still open throughout lockdown.

On a cold wintery November evening can’t beat a bowl of organic roast vegetables. Sweet potatoes, aubergine, courgette, red onion, red pepper and plum tomatoes on the vine roasted in olive oil, garlic, a sprinkling of paprika to give some heat and cayenne pepper, easy does it ..... blooming delicious and just cracked my 5 a day in one bowl!!
