I started working at weddings in 1998 and moved up to the restaurant in 2006

I really enjoy working with the breakfast team and seeing our returning guests. It’s always lovely to have a catch-up with familiar faces

Definitely a boat trip on Lough Erne. It’s so relaxing and such a lovely way to experience Fermanagh

For me, it’s definitely the people, especially our guests. I love seeing familiar faces return and hearing all about what they’ve been up to since their last visit. It’s such a lovely feeling when guests come back and you get to catch up like old friends. Those relationships and little moments are what make the job so special

𝗪𝗵𝗲𝗿𝗲 𝘄𝗼𝘂𝗹𝗱 𝘆𝗼𝘂 𝘁𝗮𝗸𝗲 𝗮 𝗳𝗶𝗿𝘀𝘁-𝘁𝗶𝗺𝗲 𝘃𝗶𝘀𝗶𝘁𝗼𝗿 𝘁𝗼 𝗙𝗲𝗿𝗺𝗮𝗻𝗮𝗴𝗵?
I’d take them into Enniskillen town for a wander down the main street, a visit to the castle and, of course, lunch on the Manor House Terrace. It’s the perfect way to experience a little bit of Fermanagh, the town, the history, the scenery and, most importantly, some good food

𝗖𝗲𝗹𝗲𝗯𝗿𝗶𝘁𝘆 𝘆𝗼𝘂’𝗱 𝗺𝗼𝘀𝘁 𝗹𝗶𝗸𝗲 𝘁𝗼 𝗵𝗮𝘃𝗲 𝗱𝗶𝗻𝗻𝗲𝗿 𝘄𝗶𝘁𝗵?
David Attenborough. I’d love to hear his stories from a lifetime of exploring the world. I imagine dinner would be fascinating, inspiring and full of incredible stories
