Demba would like to say a heartfelt Jërëjëf (thank you in his native language of Wolof) to everyone who came along to support Demba’s Dimanche Dish yesterday. He was incredibly moved by the warmth and kindness everyone showed toward his home village. 🏔️🤝

We were absolutely blown away by the incredible response—this dish completely sold out. It was so wonderful to see a mix of our amazing local community and visitors travelling the NC500 sitting down together to enjoy a taste of Senegal.

While we are thrilled by how popular it was, we also want to send a warm note to anyone who missed out on trying the Riz Sénégalais this time around. Because this was our very first time running the initiative, the wonderful demand took us by surprise, but please don't worry—there will be plenty of fantastic opportunities to experience Demba’s delicious cooking in the months ahead.

Some guests even left extra donations at the end of the evening, which was incredibly generous and moving. We are delighted to announce this first Dimanche Dish raised a fantastic £269.20 for Demba’s Development Fund.

Thank you all once again for your amazing support—whether you live just down the road or are visiting our beautiful corner of the Highlands.

This Sunday, we are bringing a taste of Senegalese Teranga (hospitality) straight to Gairloch! ✨

On Sunday, May 31st, our Chef de Partie, Demba, is cooking a very special, one-day-only menu feature for both lunch and dinner: Riz Sénégalais.

In Senegal, Dimanche (Sunday) is a sacred day where the community slows down to share stories and a meal together. Demba is sharing a signature recipe from his home fishing village of Thiaroye-sur-Mer—tender chicken drumsticks slow-cooked in a savory tomato, garlic, leek, and onion base, with the fragrant rice absorbing all the rich flavors.

🦅 The Story Behind the Dish: For over a decade, Demba has been a vital bridge between Scotland and Senegal. Just like the Highland Ospreys that migrate thousands of miles every autumn from our glens to the West African coast, Demba returns home every winter to invest his savings and tips earned as a chef into life-changing community projects. He has helped build flood drainage systems, supported the local hospital, and provided school supplies for the village children.

This Sunday's meal is food with a real purpose. A portion of every single dish sold will go directly toward the Nio Far ("We Are One") project to support the village school and help fund Demba’s dream of building a safe sanctuary for the local Talibé children.

Two shores, one sky, and a journey that connects them. 🌍✨

For a decade, our Chef de Partie, Demba, has been a vital bridge between Scotland and his home country of Senegal. This spring and summer he is cooking for all of us here in Gairloch, and every autumn, he returns home to the coastal fishing village of Thiaroye-sur-Mer.

Just like the Highland Ospreys that migrate thousands of miles every year from our glens to the West African coast, Demba’s life moves with a natural rhythm. And just like the Ospreys, he travels with a purpose.

Each winter, Demba uses his savings and tips earned right here as a chef in Scotland to fund life-changing community projects back home—from providing vital school supplies and building street drainage systems to combat the floods, to supporting the local hospital and helping women establish financial independence.

In Senegal, there is a word for this deep, open-hearted spirit of community and hospitality: Teranga. It’s a philosophy we share down to our very roots.

An Update to Opening Hours at The Old Inn, Gairloch 🕰️✨

As we move further into the season, we are delighted to announce that we are extending our service. We will now be open for dinner every Thursday evening, alongside our regular service days.

Whether you're joining us for a midweek treat or a traditional Highland weekend lunch, here is when you can find us:

Monday – Friday
🏠 Open: from 4:00pm
🍽️ Evening Meals: 5:00pm – 8:30pm (Last orders 8:30pm)

Saturday & Sunday
☀️ Lunch: 12:00pm – 2:30pm (Last orders 2:00pm)

For this evening’s service, Monday 20th April, at The Old Inn, Gairloch we are pleased to present a dish that balances the rugged flavours of the Highlands with refined Italian tradition.

Our Chefs have prepared a rich, slow-cooked Pheasant Ragù, served with hand-cut pappardelle. The earthiness of the game is beautifully countered by:

This week’s highlights:

Meteor Shower Alert: The Lyrid Meteor Shower officially begins tonight! 🌠 With a New Moon this Friday providing total, ink-black darkness, conditions are perfect for spotting these fast, bright shooting stars over the Minch.

Aurora Watch: Space weather is heating up! We are on a G2 (Moderate) Storm Watch for Friday and Saturday nights. 🌌 With solar winds picking up and the "Equinox Effect" in play, keep a close eye on the northern horizon for the Northern Lights.

Marine Wildlife & Low Tides: We are heading into a Spring Tide cycle with some exceptionally low waters. 🌊 Guests have already reported sightings of Oystercatchers, Hermit Crabs, and Green Shore Crabs in the rock pools at Gairloch Beach. It’s the perfect time for some beachcombing!

Village Sunshine: While the high peaks still have a wintry chill, the village is set for some lovely spring sunshine this weekend with highs reaching 14°C. ☀️
