This Sunday, our Head Chef, Paul Leonard, from The Forest Side will be making his Sunday Brunch debut live on Channel 4 at 10.00am, sharing his passion for seasonal cooking, his culinary journey, all things Forest Side and introducing our newest venture, Grain To Go in Ambleside.

Paul will also be cooking a vibrant summer dish celebrating the very best seasonal produce.

Our Cucumber & Apple pre-dessert is built around crisp acidity, cooling freshness, and delicate sweetness. Set buttermilk panna cotta sits alongside toasted oats, pickled compressed apple, fresh cucumber, cucumber meringue, Granny Smith apple jelly, and a cucumber & sweet cheese sorbet, finished with sweet cicely and oxalis flowers.

Head Chef Paul Leonard, opens the menu with a Lamb trio of snacks that sets the tone for an evening of bold flavours and refined craftsmanship at Forest Side Hotel.

BBQ Lamb Belly finished with a Black Garlic glaze, paired with Pickled Kohlrabi, Whipped Sheep’s Curd and Bitter Leaves freshly picked from the garden.

A delicate Seaweed Custard and Lamb Sweetbreads follow, enriched with Lamb Broth, Seaweed Jam, Pickled Mustard Seeds, Chives and Osetra Caviar.

Alongside, Sliced Hogget Bresaola offers a beautifully simple finish to the trio.
