Stuart has been with us just over a month and already making a serious impact in the kitchen. His work ethic is unreal, his attitude is spot‑on every single shift, and he’s quickly become one of those people who lifts the whole team just by being there. A genuinely incredible hard worker with an energy we’re lucky to have & that’s why he’s been voted our team member of the month!

Our Balmoral chicken is taking centre stage — the hero of our new Scottish dishes joining the menu and already a team favourite.

Tender chicken wrapped in haggis, served with spring‑onion mash, neaps, tenderstem broccoli and finished with that rich, velvety wh**ky sauce. It’s comforting, indulgent, and everything we love about Scottish cooking in one beautiful plate.

Wild boar sausages and mash, crofters pie and our haggis stack join the lineup too — but Balmoral chicken… she’s the star.

Iona has officially been part of our Commodore family for one whole year, and what an incredible year it’s been. If you know Iona, you’ll know she’s the definition of dedication — recently graduating from Vet School and making us all unbelievably proud 👩‍🎓🐭🐶

Her kindness, calm energy and genuine love for animals and people alike make her such a special part of our team. We couldn’t imagine Commodore without her.
