Two chaps, Rory Shepherd & Ollie Cush, have linked arms and created a pop-up cocktail bar specialising in Shrubs, Craft Spirits, Craft Beers and Creative Events...
What is a Shrub?!
A Shrub can take on many forms, but there are two main varieties....
The Original:
The first Shrubs were being made in the UK in the 1700s as a method of taking the edge off that home distilled, badly made Brandy. They would essentially create liqueurs by adding fruits, herbs, spices with sugar to the firewater and either let it sit and infuse for a few days or heat the concoction and drink warm.
The Next Step:
Then the yanks got hold of it! Those boys came up with an ingenious way of getting vinegar involved! They actually replaced the booze with vinegar, using far smaller doses of the shrub in cocktails as a replacement for sugar syrups and liqueurs, thus giving drinks a beautiful extra layer of depth and deliciousness!
So why 'The Shrubbery'...?!?
We became obsessed with both methods, and it soon brought the realisation that it was a delicious, creative and economical way to add complexity to drinks. The rules are sparse with Shrubs which slotted in nicely to our 'get you're hands dirty' attitude and the horizons are forever expanding.
