Wine of the Week 🍷

This week, Jack takes us to Piemonte with Costa di Bussia Dolcetto d’Alba.

From a historic estate on the renowned Bussia hill, this is Dolcetto at its most easy-going and delicious: juicy cherry, raspberry and plum, with delicate floral notes and a characteristic hint of almond on the finish.

It’s an Italian red that works particularly well when you fancy something a little lighter at this time of year.

Available by the glass in 125ml pours all week.

Supreme of kingfish, confit fennel, black truffle potatoes, velouté of fermented gooseberry juice, sea herbs.

Sam says it’s the velouté of fermented gooseberry juice that makes things particularly interesting on this dish; by fermenting the gooseberries, it develops their natural sharpness, bringing a bright acidity that cuts beautifully through the richness of the fish and potatoes.
