Having this space to work in is making me feel very spoilt. I've done loads of baking this week! So the cookie jars are getting refilled, the freezer is stocked up, there are some yummy things ready for afternoon teas this weekend and I was able to help out a friend with a few traybakes. I found another Ainsley Harriott's Meals in Minutes cookbook in the charity shop yesterday - that was two quid well spent. Now I'm researching new recipes to put my kitchen through its paces!

Back in February 2021 we thought we might as well leave Germany and set up that B&B we'd been dreaming about for most of our married life. Well, it wasn't an easy journey to get from that thought to the reality of owning a suitable property, but we seem to have made it at last, and with any luck we'll be ready to open our garden flat next weekend and the three gorgeous bedrooms a week later. To say we are excited is probably a bit of an understatement. It has been tremendous hard work and there's more to come, but we think our little corner of County Fermanagh is pretty marvelous and we can't wait for you to join us.

I made a Victoria sponge for a 90th birthday this week and it reminded me of one that I made for a village show a couple of years ago. I won second prize for this beauty full of cherry jam and vanilla buttercream. And I got to eat some of it myself, but I did share, honest!

You know the Victoria sponge was so named because Queen Victoria liked to have cake with her tea in the afternoon. Or, so they say :)
