We produce Salamis, Smoked meats and Smoked Cheese, as well as, Pates using local Wild Venison and local free range pork. Highland Charcuterie and Smoke House Ltd was established in 2014, although we had been making charcuterie and smoking food for our hotel's restaurant since 2004. We moved to our present location near Oldshoremore in 2016 and started producing our range of products full time. We
buy all our meat from highland producers, Most of our pork comes from Gary Imlach at "Cliff Top Produce" in Caithness, all his pigs are free range rare breeds. Our other supplier for pork is " Macbeths Butchers" in Forres, again free range pigs and we source locally our Scottish Beef. Our wild Vension comes from "The Ardgay game factory" in Ardgay and our Salmon from "Loch Duart Ltd" near Scourie. All the meat is hand trimmed by ourselves, the venison is seamed cut. We source as many of the other ingredients as possible from the local area, such as Chanterelles, bog myrtle and wild garlic which we pick locally. We currently make the following products:

I almost forgot to mention that ALL our products are GLUTEN FREE, not because we are trying to follow a trend but because we don't see the need to add any rusk or fillers to any sausages and since we are talking about allergens, please note that lactose is present in the cheese...! and the country pates (cream) as well as eggs(in the country pates)
