One of the pleasures of staying in a serviced apartment is having your own kitchen - especially on Pancake Day! No set breakfast times, no queues. Just a quiet morning and pancakes made exactly how you like them.

Whether you’re staying with us or at home, here’s Viridian’s proper pancake recipe to get you inspired.

The ingredients you'll need to shop for:
- 100g plain flour
- 2 eggs
- 300ml milk
- Salt
- A little butter for the pan
- Golden syrup (light treacle), to serve
- Fruit such as blueberries, blackberries, banana

Whisk the flour, salt and eggs together, slowly adding the milk until smooth. Let the batter rest for 10–15 minutes (this makes them noticeably lighter).

Heat a lightly buttered pan until properly hot, pour in just enough batter to coat the base, swirl, and cook for about a minute each side until golden.

A small twist - Add a teaspoon of vanilla and a pinch of orange zest to the batter — subtle, but it lifts the whole flavour. Finish with Golden syrup and some fruit.
