There's a rather lovely story behind the honey produced at Chilston Park, and it begins among the flowers and greenery of our Kentish grounds.

Our resident bees are an important part of life on the estate, with their hives carefully tended and the honey they produce harvested for use in the kitchens at Culpeper's Restaurant.

As they move between the flowers and plants throughout the grounds, the bees also play an important role in pollination, supporting the gardens and the wider natural environment.

From caring for the hives to bringing their honey into the kitchen, it's a wonderful connection between the land, the changing seasons and the food enjoyed by our guests.

There's a wonderful sense of history at Chilston Park, where the pleasures of country house life have been enjoyed for centuries.

When the writer John Evelyn visited in 1666, he described the estate as a ‘sweetly watered place’. The lake and surrounding parkland remain among Chilston's loveliest features, with the landscape shaped by generations of families who once called the house home.

A little time to yourself is one of the loveliest parts of a country house stay.

Some of the ingredients served at Culpeper's Restaurant have a much shorter journey to the table than you might expect.

Within the grounds of Chilston Park, our kitchen garden provides Head Chef Ali Altuntas and his team with an ever-changing selection of home-grown produce. Beetroot, salad leaves, cucumbers and fragrant herbs have all flourished here, with delicate microgreens harvested just before service to bring their freshest flavours to the plate.

The garden isn't the only part of the estate contributing to the kitchen. Chilston is also home to its own beehives, where our resident bees produce honey that has inspired some rather lovely creations. One such dessert brought together Chilston honey and rosewater mousse, bee pollen, chamomile jelly and burnt honey ice cream.

It's this close connection between the grounds and the kitchen that makes dining at Culpeper's so special. From the ingredients grown just outside our doors to seasonal produce sourced from across Kent, every menu reflects a genuine appreciation for where good food begins.

Our bedrooms have a wonderful sense of individuality, shaped by the history of the house and the many details that give each room its own character. From beautifully carved wooden bedframes and traditional patterned walls to the sash windows overlooking the grounds, there's plenty to appreciate in the quieter moments of a stay.
