It’s rare to get out of his Somerset garden. If you’re further north, are bringing him to the midlands. A whole day to be in conversation with Charles, pick his brain and create a No Dig bed with him.
The setting is one to learn from - a kitchen walled garden serving a Michelin star restaurant where provenance is everything.
And only two part time gardeners! 😬💪 Charles ethos with No Dig has helped us do less work, increase production and enrich flavour.

All summer, we’ve got Lap-Fai Lee — veteran BBQ competitor with Backyard Brummies and Reserve Grand Champion at Grillstock — to bring his left-field approach to live-fire cooking to Hampton Manor cookery school.
Drawing influences from Texas smokehouses to the flavours and techniques of Cantonese roast duck, Lap’s cooking sits somewhere between precision and instinct.
But what makes these workshops special isn’t just the recipe.
It’s watching people slow down for a few hours; standing around fire together, learning something with their hands, picking up stories you wouldn’t normally stumble across in everyday life. Getting you ready with a ritual for your next bank holiday gathering.

Most people who love food settle for one great meal per trip. We’re not those kind of people! When we built Hampton Manor, it was about putting the table first - the food and the connection.
When we designed our stays, we’d been thinking about our own travelling… we’ve always wanted to get behind the scenes and under the story. But we just found it so hard. A handshake from a Chef was about as far as it went.
So we thought, how do we create connection rather than just consumerism? We felt it was being able to touch, feel and taste the story.
How often does a place market this… but feels distant when you arrive? We wanted to make sure connection happened for everyone, not just the lucky few. So here it is on a plate…
