Samphire.
9 years ago, almost to the day, I signed the lease on a little restaurant on the South Coast…. A life long dream!
The idea was simple, locally sourced fresh fish accompanied with beautifully simple veggies. Within that 8 years, we grew and developed exponentially and at some point, we almost tried too hard. We started to overcomplicate things and it wasn’t just cooking from the heart.
In September 2018 we shut the doors. It was a very heavy-hearted decision, and in all honesty I didn’t think I would be re-opening. Samphire had been more than just hard work for the last 18 months, so to put it down for a while was what I needed to do. Running a restaurant can be cruel. It’s quite lonely, incredibly hard work and full of heartbreak when your dream isn’t imagined. In that 6 months we tried to sell it and crossed paths with numerous people who thought running a restaurant would be a breeze, but it takes a special sort of person to take on the institution that Samphire had become!
Fast forward to Feb 2019 and I receive a call from a chef, fresh back from Sydney, new to the area and intrigued by our closed doors. After meeting someone with the raw enthusiasm for my restaurant that had been lacking, it all began to fall into place. Throw in their other half, a home-grown Witterings’ restaurant manager and …boom....we have a team!
We’ve gone back to our roots, looking at the simple ingredients & simplicity of starting a local restaurant. Our ideas have stemmed from our customers, as well as us, and we will be working around the clock to make it happen. We feel that we’ve come up with a lovely, transparent, low impact menu that is on trend, but is actually how many of us eat or aspire to eat.
So….Three Veg. Formally, Three Veg at Samphire. Vegetables come first, with no lack of imagination, flavour, taste or texture. We are still very focused on giving you a full dining experience with well-considered fish, meat & dairy as add-ons to our dishes.
The heart & soul of Samphire will never change. We are thrilled to be opening our doors again in time for Summer and welcoming in new and old faces.
