Mark Hartstone BSc Hons MCGC

Chef proprietor Mark initially trained as a Geologist (no rock cake puns) and Petroleum Engineer. On the first day of the millennium he had an epiphany and decided to follow his dream and passion of cooking. Over the last seven years he has trained at the Bournemouth and Poole College catering department with a world wide reputation. He has worked in the brig

ades and kitchens of Europe’s top chefs. Stéphane Carrade at Chez Ruffet, Raymond Blancs’ Le Manoir aux Quat’ Saisons, with Shaun Hill and Scott McKenzie- Foy at the Montagu Arms, Alan Murchisonfrom L’Ortolan, Luke Mathews and not least Pierre Chevillard at Chewton Glen. For the last few years Mark Hartstone has been Pierres’ Sous chef at Pebble Beach helping him to win the Remy Martin South East restaurant of the year 2007 and other critical acclaim. He has won both regional competitions and the 2006 prestigious National Seafood Recipe Challenge. The competition is the most popular and well- regarded chefs competition in the country. His prize was a gastronomic tour of Norway, working alongside Swedish chef Anders Blomkvist of the famous Store Norske Fiskekompani in the largest town of the Arctic circle. Emmanuelle Hartstone

Emmanuelle has started her career in Germany, Munich, where she was born and raised. Her entire family is French, from Brittany, Nantes. She did a 3 year apprentice in Hospitality Management and after receiving her diploma, she ventured out to the Black Forest to the Traube Tonbach Hotel, a Relais and Chateaux luxury hotel and started putting her new gained knowledge into practice. Over the years, she has worked in many excellent hotels and progressed through the ranks. After spending some years in Germany, she went to England, in order to learn the English language and her path crossed with the famous 5 red star Chewton Glen hotel in New Milton, where she spend some time to learn English. Her travels took her to the USA, in Massachusetts at a 5 red star, Relais and Chateaux hotel, Blantyre, where she run the Housekeeping department as Head Housekeeper. Several years later, she returned to Europe and went to Engnland, Dorset, to Summer Lodge Hotel, a 4 red star, Relais and Chateaux hotel as Assistant Manager, helping the General Manager with the overall running of the property. A year later, Chewton Glen Hotel, offered her a job to run the Housekeeping department for them and at a later date, she was promoted to Senior Assistant Manager, helping to run the Front of House areas, including the Spa. Her latest role before joining her husband in their new challenge, was for several years at the 3 red star hotel, The Montagu Arms Hotel in Beaulieu as General Manager.
