is a travel chef, food writer, and culinary archivist with over a decade of professional experience. Trained with a professional diploma in pâtisserie, his work explores the deep connections between food, culture, and identity across West Africa.
He recently completed an extensive journey across 10 countries in the region, documenting food traditions and the ways communities are connected through shared ingredients and culinary history. For Kwame-Olisa, food is more than nourishment, it is political, cultural, and a powerful archive of memory and place.
Through his travels and residency programs across West Africa, he continues to research sustainability, local food systems, and the stories behind everyday dishes.
