The tradition of tsikoudia in Crete's mountain villages
Every autumn, after the grape harvest ends and the wine has been pressed, Cretan villages turn to a second tradition rooted in the same fruit: tsikoudia. This grape pomace spirit, distilled from the skins, seeds and stems left over from winemaking, has been made on the island for generations, using methods that have barely changed.
