June brings warmer and longer days to Kinsterna.

More time is spent by the pool with something cold nearby, the sea becomes part of daily life again, and summer slowly settles into the estate.

Around the gardens, the beehives enter their busiest season, while evenings outdoors last a little longer around the tables of Kinsterna.

Καθώς ο Ιούνιος φέρνει συνήθως πιο ζεστές και μεγάλες μέρες, οι επισκέπτες μας επιλέγουν να περάσουν τη μέρα τους στις πισίνες του αρχοντικού με ένα δροσερό ποτό ή να κάνουν βουτιές στις γύρω παραλίες της περιοχής.

Παράλληλα, οι κυψέλες μπαίνουν στην πιο δραστήρια περίοδο της χρονιάς, οι συκιές και τα αμπέλια ξεκινούν να ωριμάζουν τους καρπούς τους, ενώ τα δείπνα στους εξωτερικούς χώρους των εστιατορίων γίνονται ακόμα πιο ευχάριστα καθώς η θερμοκρασία είναι ιδανική.

Το καλοκαίρι ξεκινά και επίσημα στο κτήμα.

Ever wondered where the name “Kinsterna” comes from?

The word originates from the Byzantine Greek “kinsterna”, meaning cistern, the covered water tanks once used to collect rainwater.

For centuries, these cisterns were an important part of life in Monemvasia, where water and the landscape have always been closely connected.

Αναρωτηθήκατε ποτέ από πού προέρχεται το όνομα «Kinsterna»;

Είναι αντιδάνειο από την ελληνική λέξη «Κύστη», δηλαδή υπόγεια δεξαμενή, και τη ρωμαϊκή «Στέρνα».

Για αιώνες, οι κινστέρνες αποτελούσαν σημαντικό μέρος της ζωής στη Μονεμβασιά, όπου το νερό ήταν πάντα στενά συνδεδεμένο με τη γη και την καθημερινότητα.

This time of year marks the beginning of the mulberry harvest on the estate.

They are served at breakfast and later become part of the seasonal desserts prepared by the kitchen team.

Αυτή την εποχή ξεκινά η συλλογή των μούρων στο κτήμα.

Σερβίρονται στο πρωινό και στη συνέχεια γίνονται μέρος των εποχικών γλυκών που ετοιμάζει η ομάδα της κουζίνας.

Breakfast at Kinsterna is prepared each morning in the kitchens of the estate.

Eggs come from the hen house, fruits are gathered from the gardens and orchards, while the tables fill daily with homemade pastries, spoon sweets and different seasonal preparations made with ingredients from the estate and the surrounding area.

Το πρωινό στο Kinsterna ετοιμάζεται καθημερινά στις κουζίνες του κτήματος.

Τα αυγά προέρχονται από το κοτέτσι, τα φρούτα συλλέγονται από τους κήπους και τα περιβόλια, ενώ τα τραπέζια γεμίζουν καθημερινά με σπιτικές πίτες, γλυκά του κουταλιού και διαφορετικές εποχικές παρασκευές από υλικά του κτήματος και της γύρω περιοχής.

Όλα φτάνουν στο τραπέζι ως μέρος της καθημερινότητας του κτήματος.

The estate’s premium extra virgin olive oil is now presented with its new label.

Produced from the local variety of Athinoelia olives, grown in the estate’s centuries-old olive groves, with some trees dating back more than 500 years, it is used daily across the kitchens of Kinsterna and accompanies many of the dishes served across the estate’s restaurants.

Το εξαιρετικό παρθένο ελαιόλαδο του κτήματος παρουσιάζεται πλέον με τη νέα του ετικέτα.

Παράγεται από την τοπική ποικιλία Αθηνοελιάς, από τους αιωνόβιους ελαιώνες του Kinsterna, με ορισμένα δέντρα να ξεπερνούν τα 500 χρόνια ζωής και χρησιμοποιείται καθημερινά στην κουζίνα κτήματος, συνοδεύοντας πολλά από τα πιάτα που σερβίρονται εδώ.

During breakfast, fresh honey is extracted from the combs nearby using a honey extractor.

Guests have the opportunity to observe the process before the honey is later served at the table alongside the morning meal.

Κατά τη διάρκεια του πρωινού, το φρέσκο μέλι εξάγεται και συλλέγεται εκείνη τη στιγμή από τις κηρήθρες, μέσω μελιτοεξαγωγέα.

Οι επισκέπτες έχουν την ευκαιρία να παρακολουθήσουν τη διαδικασία, πριν το μέλι σερβιριστεί αργότερα στο τραπέζι μαζί με το πρωινό.

As evening falls, the estate remains softly lit.
Lighting is intentionally kept low at night, limiting light pollution and allowing both the landscape and its wildlife to remain undisturbed.

The evenings outdoors are then shaped mostly by the clear night sky and the stars above, while enjoying a quiet drink at the bar.

Καθώς πέφτει το φως της ημέρας, το κτήμα φωτίζεται διακριτικά.
Ο φωτισμός παραμένει σκόπιμα χαμηλός τη νύχτα, περιορίζοντας τη φωτορύπανση και αφήνοντας το τοπίο και τη ζωή γύρω του να συνεχίζουν κανονικά.

Έτσι, τα βράδια έξω παραμένουν φωτισμένα κυρίως από τον καθαρό ουρανό και τα αστέρια, όπου μπορεί κανείς να απολαύσει το ποτό του με ηρεμία στο μπαρ.
