名為雞,實無雞!係用冰肉、雞肝、瘦肉相間串燒,形似錢幣。師傅仲用咗獨門袐方:採用鹹檬水醃製,令到燒出嚟嘅金錢雞散發出迷人嘅果香味,入口做到甘香四溢,外脆內嫩。
🧡 仙鶴神針 - 功夫菜巔峰
去骨乳鴿幻化為「仙鶴」,去骨工序繁複精細,一唔小心就會整穿鴿身。再將事先用上湯煨入味嘅魚翅、金華火腿等珍貴用料釀入其中,最後細火燉煮而成。成品達到湯鮮味醇,鴿肉嫩滑,盡顯粵菜嘅精雕細琢。

The chef uses a secret family recipe, marinating with salted lemon water, so that the roasted money chicken exudes an enchanting fruity aroma, bursting with sweet savouriness at the first bite—crisp on the outside, tender within.
🧡 Immortal Crane Divine Needle - The Pinnacle of Kung Fu Cuisine A deboned squab transforms into the 'immortal crane', with the boning process intricate and precise; one careless slip could tear the pigeon skin. Pre-simmered in superior stock for deep flavour, precious ingredients like shark's fin and Jinhua ham are then stuffed inside, followed by gentle stewing over a low flame. The finished dish achieves a clear, rich broth full of umami, with silken pigeon meat that showcases the exquisite craftsmanship of Cantonese cuisine.
🌺 Jiangnan Hundred Flowers Chicken - One of Traditional Guangzhou's Four Famous Dishes The whole chicken must first be skinned and deboned, then the breast and thigh meats extracted. The chef hand-chops the chicken meat, fresh prawns, diced pork fatback, and celery, pounding them by hand into a bouncy paste before carefully stuffing it into the chicken skin. The skin's richness perfectly melds with the springy prawn paste, paired with a petal-like glossy sauce—elegant and noble.
