第八站：汲取涼茶舖常見的傳統豬腳薑醋，結合墨西哥辣椒浸釀龍舌蘭、薑味利口酒、標誌性的「八珍」甜醋及蛋白，象徵著廣東傳統「滿月宴」的溫補滋味。

An unexpected creation inspired by the traditional Cantonese celebration marking a baby's first month. The cocktail draws upon the sweet, warming flavours of classic Chinese vinegar pork trotters with ginger and egg, that could be found at herbal tea shops “leung cha pou” (涼茶舖). Blending jalapeño infused tequila, ginger liqueur, iconic “Pat Chun” sweetened vinegar and egg white into a savoury, tangy drinking experience complete with soy-infused quail egg, this cocktail is synonymous with family gatherings and neighbourly care.

第七站：重現炎夏午後喝下一杯冰涼紅豆冰的暢快感，以烤椰子浸釀伏特加、紅豆泥、煉奶及紅豆利口酒，重新演繹經典冰室飲品。🥤

Long before minimalist cafés and photogenic matcha lattes, there were Ice Rooms “Bing Sutt” (冰室) — old-school cafés popularised in 1950s serving cold-drinks and light-meals. Red bean ice was never just dessert; it was a pause button. Sweet beans evaporated or condensed milk, a pile of crushed ice and the slow pleasure of stirring everything together made it a treat that felt both humble and indulgent.

This cocktail turns that memory of summer childhood afternoons into an adult daydream with toasted coconut infused vodka and red bean liqueur dancing with rich red bean purée, and topped with dense coconut cream foam. 🥥

Misty Pu Er 霧色普洱🍵

第六站：以普洱茶浸釀龍舌蘭為基底，加入青檸、龍舌蘭糖漿及柚子蛋白泡沫提升層次，昇華品茗的儀式感，向老茶樓致敬。🫖

Pu Er tea has long belonged to Hong Hong’s rhythm of gathering — poured in Teahouses “Cha Lou” (茶樓). Its deep, earthy character comes from fermentation and age, with round tea “cakes” often kept, gifted, collected and traded with almost wine-like devotion.
For older generations, it speaks of ritual and refinement; for younger drinkers, it carries a certain vintage, smoky mystique. 💨

This cocktail takes that old-world tea culture and runs it through a neon-lit Vibes filter. Earthy Yunnan Pu Er tea infused tequila gets a modern twist with tart lime juice, agave syrup, and a zesty layer of yuzu foam. 🍊

Hong Kong’s traditional Chinese Medicine Shops “Yerk Choi Pou” (藥材舖) are among the city’s most atmospheric spaces with shelves of herbs, berries, bizarre roots, and remedies arranged in mystical order. For many locals, these pharmacies are part of everyday life, where families seek seasonal tonics for dispelling dampness in hot and humid climate.

The Kowloon Highball borrows that language of herbal depth with its cheeky, fizzy twist on a quintessentially local remedy sprouting from an apothecary tradition. The result is an unexpected herbal nightlife fix of fiery Chinese Baijiu with sweet, deep red date syrup and fresh lemon juice, lengthened by a fizzy, TCM-inspired soda crafted from goji berry and hawthorn.

Dried fruits and herbal remedies are woven into the city’s snack culture — the kind found in Preserved Fruit Shops “Leung Gwor Pou” (涼果舖). Preserved plum, with its tangy character, carries the taste of after-school treats, and travel sickness cures.

“Si Dor” (士多) or traditional mom-and-pop neighbourhood shops were cherished community hubs where familiar faces met, conversations flowed, and a strong sense of neighbourhood connection thrived.

Brittle maltose cracker snacks laced with sticky maltose syrup, once sold in those corner stores are a humble, old-school, and slowly disappearing Hong Kong pleasure.

In our vibrant jade-green cocktail their sweetness meets a crisp bitter melon juice, sweet and floral vermouth, and smoky mezcal, creating a cocktail that captures the city's unique blend of contrasts. 💚
