Ekstra djevičansko maslinovo ulje dobiva se mehaničkim postupcima iz plodova maslina i uz odgovarajuće kemijske parametre mora imati i „savršena“ senzorska svojstva koja se izražavaju kroz voćnost - miris i okus na lišće ili plod masline, (zelene ili zrele) zelenog bajama, zelene jabuke, trave.... i ne smije imati mana. Pikantnost i gorčina ulja su VRLINE ulja, a nikako njegove mane.
Extra virgin olive oil is obtained by mechanical procedures from olive fruits and, in addition to the appropriate chemical parameters, must also have “perfect” sensorial properties that are expressed through fruitiness - the smell and taste of olive leaves or fruit, (green or ripe) green bajama, green apple, grass.... and must not have flaws. The spiciness and bitterness of the oil are the VIRTUES of the oil, not its disadvantages.
