Well-known and famous all over the island of Bali, each region has its own characteristic Nasi Campur (Rice platter topped with fried crisp coconut and Balinese peanuts). At Tugu, the recipe originated from Anak Agung Istri Mahawati, member of the Pemecutan royal family. It is served with fish in Balinese relish, spicy shredded chicken, chicken in coconut gravy, fish satay, sweet & spicy pork satay, vegetables in grated coconut, egg in Balinese sauce “benyuh" (stew grated coconut) and crisp-fried shrimp.

Known for its authentic traditional Indonesian food in Bali and Java, the Waroeng Tugu at Hotel Tugu Bali is a place where a cooking class is not just about cooking food, but also a unique experience that introduces to guests a tradition hundreds of years old. It opens the doors to a glimpse into the beautiful simplicity and the exotic richness of Indonesian dining and cooking culture.

The classes are held by Iboe Soelastri, our Indonesian chef, who began her journey of cooking with her grandmother when she was just four years old.Commencing in the morning, guests begin by choosing the dishes they most prefer from Iboe Soelastri’s large collection of Javanese and Balinese recipes.

A visit to a Balinese traditional market follows where all the freshest ingredients of the archipelago of islands, once known as the Spice Islands, can be found amidst the daily bustle of modern day market life. While gathering the ingredients for the cooking class guests will be involved in and experience first-hand the Balinese way of daily living, the jovial and sometimes noisy bargaining style of the vendors and buyers...

Waroeng Tugu, where the class is held, is an authentic, traditionally quite humble street-side eatery that represents the way the Javanese and the Balinese have dined since the era of the Majapahit Kingdom, between the 1500s and the beginning of the 19th century. Traditional steamers on wood-fire terracotta stoves in the open kitchen, oil lamps and stone grinders…

Hayam Wuruk was the ruler of the Javanese Hindu Empire of Majapahit, he had inherited the throne at the age of sixteen, when the great Patih, the prime minister, Gajah Mada was at the height of his power. Under Wayam Wuruk’s reign, the Majapahit empire extended its supremacy throughout the sprawling archipelago that later became known as the East Indies, and eventually Indonesia.

The Royal TUGUDOM dining experience tells the story of the grand dining ceremonies of the royal expeditions of King Hayam Wuruk of the Majapahit Kingdom through vast areas including Bali. The Majapahit royal entourage traveled on foot, with buffalo-drawn carts, horses and elephants, from the eastern region of Java to Bali, stopping at temples, markets, villages, and ‘tugus’, the monuments of the God of Çiwa.
In Tugu’s Royal Tugudom dining, a parade of staff appears in the costumes of the villagers, soldiers and dancers who would attend to the King and his entourage and they serve you just as they might a Royal guest, loving every moment of the charade that takes all participants back to a glorious time of feasting and merriment.
