Farm eggs delivered daily from the village nearby, mushrooms and the spinach from the middle of the island where it a touch cooler and the butter for the Hollandaise….the best from France 🇫🇷

We opt out of sticking a sprig of parsley on top of this dish 🚫☘️, since we perceive the beauty in the perfect eggs and the velvet sauce🤘 We choose not to mask it or distract from it, just a touch of black pepper…Enjoy!
