Fab evening at our neighbours, the Di**le Distillery for the launch of their new branding and the fab new Di**le Gin with orange and Di**le Sea Salt - a great collaboration between two local companies to bring a gorgeous new product to market. For all you gin lovers out there you HAVE to know include this in your drinks cabinet - lovely for summer drinks.

We are incredibly proud of our distillery who fly the flag for Di**le wherever they go.

With so many lovely new followers 🙏 over the last few months we thought it was time we reintroduced ourselves. We are Helen and Brian and are the owners of our beloved Castlewood House, our very own little piece of heaven in one of the most beautiful places in the world.

Our backstory is that we met in Ashford Castle back in the 1990’s while both on work placement from college, Helen from Dublin College of Catering, or Cathal Brugha Street as we affectionately called it, and Brian from Galway. What an incredible place and what a start to our hotel management careers, and a place that will forever hold a special place in our hearts 💕.

We then worked for lots of other hotels, including Dromoland Castle, Nuremore Hotel, the O’Callaghan Hotel group to name but a few.

After we got married in 2000 we started to think about owning our own place, a dream we both shared for many years. We borrowed the money, commissioned an architect, contracted a local builder snd started building Castlewood House in 2004. I’m not going to lie, it was scary, and there were days that were stressful and there were days that you questioned your own judgement and hoped that your decisions were indeed the ‘ right ‘ decisions. But we believed in each other and our ability and opened just 12 months later in May 2005 and haven’t looked back since.

It’s been a rollercoaster for the last 21 years, with growing our family and our business but we’ve loved every minute. We love welcoming people and looking after people and have made so many new friends from all over the world. Di**le has been an incredibly welcoming place and we are so grateful for that. It’s a brilliant community here and we just love being a small part of the magic of the Di**le Peninsula.

My advice to anyone thinking of opening their own business, follow your dreams, never be afraid to give it a go, you just never know where they will lead you

Making our scones is the very first job every morning , they are light and fluffy on the inside and just divine with cream and jam. One of our guests recently said that they were “ like eating a cloud “ !!
If there are any left after breakfast we offer them for afternoon tea which is complimentary for our guests

If you would like to give them a go here is the recipe

Castlewood House Breakfast Scones
You will need:
Large non stick baking sheet
Ilb /460g Plain Flour
1 oz Soft Margarine
2 oz Butter
2 eggs ( beaten)
1 teaspoon Baking Powder
1 teaspoon Vanilla Extract
350ml or 11oz Buttermilk

Sieve the flour and baking powder into a large mixing bowl. Rub in the margarine and butter with your fingertips until it resembles fine breadcrumbs. Add the eggs, vanilla extract and buttermilk - add slowly until the dough is wet enough to form a soft dough - this will give lovely soft scones.
Roll out to a 1 inch thickness and cut with a cookie cutter.
Cook for 12 - 15 minutes at 180 degrees until a light golden colour. Cool on a wire tray and enjoy !!

What a fabulous evening on Friday night in at the Slow Concept Di**le fashion show, when owner Fran showcased the 20 Irish designers she has in her concept store on Di**le Marina. It was such fun to get all dolled up and to model some amazing clothes . I especially loved my denim suit from _clothing, it felt so comfortable.
Thank you Fran for asking me and if you are visiting Di**le soon and want something different make sure you pop in .
I also got to meet the fabulous Dr. Sinead Ryan who travelled down from Limerick to model and some of the young designers .
