👨‍🍳Favourite thing to cook? I love cooking with fish, it's so flexible and adaptable to a variety of dishes.

🍴What's your favourite restaurant? (In Ireland or abroad) A small café in Paris called Angelina's which does the best beef tartare I've ever tasted.

❗️What advice would you give someone coming into the business as a chef? Prepare to work long hours, know that it is inevitable you will miss family events, so you have to love being a chef and not just see it as a means to an end!

🧀Last question, what's always in your fridge? A selection of cheeses, lamb and fresh strawberries - an odd combination I know!
