We had such a fun morning at the Clybaun Hotel on Wednesday celebrating our Woman of the Year awards with a delicious taster party 🎉🎉

Thank you so much to every single member who made food - there was an incredible spread of sweet & savoury dishes - and to all of our nominees who shared their stories, each and every one of them are simply amazing 💖

Can't wait to do it all AGAIN tomorrow in Killannin Community Hall!!🥳🥳

Congratulations to our lovely Máire Ní Mhaoláin Kelly, who was voted Woman of the Year in our Wednesday 7.30am session at the Clybaun Hotel 🎉🎉

Despite only being with us a short time, she has made a huge impact with her love of Food Optimising, always sharing gorgeous recipes she has tried at home and achieving some amazing results in the process!!🏆🎊🎊

Excited for today's taster parties as we celebrate our Woman of the Year awards 🩷🎉🎉

I made carrot cake🥕 baked oats 🌾 to share with the group - recipe from Slimming World Ballinasloe and Roscommon with Susan so hopefully, it tastes nice!!🤞

So if you want to hear from some inspirational local ladies while sampling some delicious Slimming World friendly food, join us in the Heather Suite ballroom in the Clybaun Hotel from 7.15-11am this morning - everyone is welcome 🥰

High protein breakfast 🍳 Think Micks crepes meets 😁

Ingredients;
Sliced tomatoes 🍅
Sliced mushrooms 🍄
Scallions 💚 homegrown...thanks Mary! 😘
Lean ham/bacon 🍖🥓
2x eggs 🥚
Pan boxty 🥔 (0.5 swip) Drummully Boxty
Salt, pepper & herbs 🌿
Spray oil (0.5 swip)
22g feta cheese 🧀 (1/2 calcium choice)
Green leaves 🍃
Balsamic vinegar of Modena ⚱️

Total 1 swip + 1/2 calcium choice 👌

Recipe;
Pop the boxty in your toaster x2 so it puffs out (like a pitta) and then slice in half, being careful to avoid the steam! In a jug, whisk 2 eggs and season with a pinch of salt, pepper & mixed herbs.
Sauté your veggies for a minute before adding the ham. Add the egg mixture, place the half slice of boxty on top and cover the pan with a lid for 2 minutes.
Then flip over and leave for another minute.
Once it's cooked, add a handful of your favourite leaves (I've used a mixture of chard & rocket) to one half, crumble over the feta cheese and add a drizzle of balsamic vinegar.
Fold in half, cut into thirds. Make your favourite cuppa. Enjoy 😃

Give it up for our fabulous Mary Watts from Killannin, who picked up her 1 stone award at group yesterday 😀 Mary is such a valued member of our Saturday morning group - always sharing delicious recipes, brilliant ideas and even beautiful homegrown vegetables from her garden!🥕🧅🫑🌶 What an absolute gem she is 💎

What's really lovely was that when I was presenting this award to Mary yesterday morning, she told me that she had been inspired by Catherines photo here the other day, as it got her thinking how close she was to her own award, which gave her great motivation to really go for it this week!!💪🥰🥰

Our Slimming World groups aren't just weight loss clubs, we're a community of normal, everyday people on a journey to become our healthiest and happiest selves - celebrating each others wins, lifting each other up when we're struggling, and inspiring each other to be the best version of ourselves, for ourselves ❤️

Our lovely member Catherine Larkin from Rahoon was delighted to achieve her one stone award Clybaun Hotel Galway this morning 🏆🥳

She also celebrates dropping down into a new stone bracket and said she's really noticing the difference in her clothes now too - one of the absolute best feelings 💃🏼✨️
