a quickie today and using the term ‘bake’ loosely as all that required an oven was the crunch part which is a variation on a shortbread theme… however… Ginger crunch with a pistachio crumb is a winner 🏅 Courtesy of The Mountain Cafe Cookbook 😋

You can tell the eventing season is over when the content switches over to another interest of ours in cooking and baking! The Sunday bake today is an Italian Torta di Pere, introduced to us by a dear friend and now part of the repertoire if there’s a few pears that need using up. Delicious eaten on hoof with a short sharp espresso 😋

Almost an annual post for this page! Why is it so difficult to keep up with everything! The summer is flying by, if only the weather was a little more on side… our poor guests last night arrived somewhat wearie after a very rocky trip across the Irish Sea, but left fully revived after a peaceful night’s sleep & one of Mum’s epic full Irish breakfast’s including her prize wining Irish soda bread! Makes it all worthwhile when you receive lovely message from your guests. Thank you David, Nadia & Niamh, enjoy the rest of your trip:)
