Ballywarren Country House is the delightful family home of David and Diane Skelton, which they have lovingly created to reflect the charm and character of the late eighteenth century. Situated near Cong, on the edge of Connemara National Park, close to Lough Corrib, Lough Mask and the magnificent Atlantic coast, Ballywarren is set in six acres of farm land, criss-crossed by stone walls and grazed by sheep.

David has finished picking all the gooseberries and black currants, straight into the freezer, can't wait to make oatmeal gooseberry crumble sundae with custard and vanilla ice cream. I love the way gooseberries caramelize around the edge.

Just back from France and brought the sun and heat back with us, not to mention the wine, cheese, herbs, honey and guinea fowl. Molly and Brid are with us at the moment and are a great help doing some of the chores in this intense heat wave.

Absolutely gorgeous, diced shoulder of pork in white wine with prunes, slowly cooked and finished with cream. Can't wait to cook it again.

Just found an old recipe for French raspberry ice cream, it is really good and uses no eggs. 12 oz raspberries, juice of one lemon, juice of one orange, 6 oz granulated sugar 3/4 pint double cream 3 tbls iced water. Sift raspberries, mix with orange, lemon and sugar and chill for an hour. Whip cream with water, stir into raspberry puree and beat lightly together. Churn in ice cream maker or in rigid box in freezer.

More homemade Greek style yogurt, this is going really well, it is so thick you can add lots of different flavors without thinning it down. Also made some smoked salmon pate today, very good!
