Meet Sean French, a member of our Concierge Team at CLIFF House Hotel.

Originally from Cork City, Sean has called Dungarvan home since 2002 and has strong connections with the local community. A lifelong rugby enthusiast, he was one of three people involved in establishing the underage section of Dungarvan Rugby Club, where he went on to hold a number of roles, including Treasurer.

As part of the CLIFF House Hotel Concierge Team, Sean brings that wealth of experience, local knowledge and love of the area.

For Sean, working at CLIFF House Hotel is about much more than the spectacular setting:

Meet Daniel Crewe, Executive Chef at CLIFF House Hotel.

For Daniel, great food is about more than what arrives on the plate. It’s about the people behind it, a passionate kitchen team and creating an experience for our guests to remember. Here, he describes the journey that has brought him to Cliff House and what continues to inspire his work:

''My journey began in London, where I trained and worked alongside some of the industry's most influential chefs, including Gordon Ramsay, Daniel Boulud, and Mark Hix. I also spent time at the iconic Brown's Hotel, part of the Sir Rocco Forte collection, where I developed a deep appreciation for five-star hospitality and the attention to detail that defines exceptional dining.

After many rewarding years abroad, I returned to Ireland to take on the role of Executive Chef at the Cliff House Hotel in Ardmore, County Waterford. Leading the kitchen in one of Ireland's most celebrated hotels was an incredible privilege and gave me the opportunity to work with some of the finest seafood and artisan produce the country has to offer.

Ardmore is a place that quickly captured my heart. It's a beautiful seaside village with a strong sense of community, bustling with life during the summer months and surrounded by one of Ireland's most breathtaking coastlines. The landscape, the people, and the incredible local producers continue to inspire my cooking every day.

Cooking has given me the opportunity to travel, learn from some of the very best in the industry, and continually evolve as a chef. I'm proud of the journey that has brought me here, and I'm excited to keep pushing forward, creating exceptional dining experiences while celebrating the incredible ingredients and hospitality that Ireland has to offer.''
