Pani puri, golgappe, or puchka, call it whatever, this chaat is a national obsession. A street food people donโ€™t mind standing in queues for! The star of this chaat is the flavourful and vibrant โ€œteekha and meetha paniโ€, or โ€œflavoured waterโ€, a digestive with a mix of spices, which everyone loves to ask the โ€œ โ€ for after finishing their golgappas.

Ingredients:
For SANTRI PANI
1 Orange
4 to 5 Chinese Oranges
1 1/2 cup Pineapple
1 Lemon
1 tsp Red Chilli Powder
1 tsp Kala Namak
Salt to taste
1 tsp Amchur Powder
750 ml Chilled Water

For GULABI PANI
1 Raw Mango
1 cup Pomegranate
2 tbsp Powdered Sugar
1 tsp Kala namak
Salt to taste
3 to 4 Hajmola Imli
750 ml Chilled Water

For HARA TIKHA PANI
1 cup Coriander
1/2 cup Mint Leaves
2 to 3 Green Chillies
3 tbsp Powdered Sugar
1 tsp Roasted Jeera Powder
1 tsp Red Chilli Powder
1 tsp Kala Namak
1 tsp Black Pepper Powder
1/4 tsp Hing Powder
Salt to taste
1/2 cup Tamarind Pulp
Garnish with bondi ,mint leaves .

Serve chilled and enjoy !!!
