Bengal to Table brought Sienna Calcutta and The Johri Jaipur together over food, cocktails and a shared curiosity for each other’s culinary worlds 🥂✨⚜️

Weeks of preparation came together in an evening of dishes exchanged, cocktails poured, conversations carried across tables and new friendships made ~

A little of Calcutta, a little of Jaipur, and a room full of people who made it their own 🥂🌞

⚜️🌱 Bengal meets Jaipur at The Johri ✴️✨

Chef Avinandan Avinandan Kundu and Chef Koyel Koyel Roy Nandy of Sienna Calcutta brought their take on Bengali cuisine to Jaipur on 3rd October, collaborating with Chef Sonu Travel + Leisure India & South Asia and The Johri’s kitchen on a seven-course vegetarian tasting menu.

The menu moved from pav with posto, ghee and aloo-mara butters to shaak’r aachar-chatu, pickled greens with sattu foam, followed by choshi-kumro xo, handmade pasta with spicy pumpkin XO, and chaana’r kofta-malai curry, cottage cheese dumplings in coconut sauce with naan puri.

The cocktail menu featured four serves: Kakricante with cucumber and chilli, Smoked Melon Fizz with grapefruit, Tiki-Taka with tamarind and roasted spices, and Coco Bubbles with coconut, pineapple and gondhoraj.

Across the menu and the bar, the evening brought together two culinary perspectives over food, cocktails and conversations.

A moment of immense pride for our entire team 🏆 and a celebration of the talent, creativity and hard work that goes into everything we do.

We believe deeply in Jaipur, in its incredible produce, its people and its growing place on India’s culinary map. And we’re so proud to be part of that story.

As summer draws to a close, a final note from the season’s menu at The Johri, Jaipur ✨

Khad Ki Subzi takes its cue from the rustic khad cooking traditions of the Thar ~ root vegetables slow-cooked in a sealed ‘handi’ beneath roomali dough, allowing smoke, earth and spice to settle into every layer.
