Svasara Monsoon Special | Charcoal-Grilled Chicken with Kaala Masala

A rustic Svasara monsoon special, succulent strips of chicken, charcoal-grilled and generously coated in the region’s signature Kaala Masala.

A deeply aromatic spice blend rooted in the culinary traditions of Vidarbha, Pune, Kolhapur and the Desh region of Maharashtra, Kala Masala is roasted patiently along with chargrilled dry coconut, garlic, ginger and dried red chillies. It is then layered with the earthy stone flower (Patthar ke Phool / Dagad Phool) and Nag Kesar.

One morning at Belara, we encountered a large male sloth bear ambling along the jeep track. For nearly 100 metres, he walked unhurriedly down the road, his nose close to the ground as he searched for fallen Mahua flowers beneath the trees lining both sides of the track. Watching him forage so calmly was a gentle reminder of how important these seasonal blooms are, providing a valuable source of nourishment for wildlife during the summer months.

International Owl Awareness Day 🦉

With their exceptional night vision, acute hearing, and near-silent flight, owls are among nature’s most skilled nocturnal hunters. They are also important indicators of healthy ecosystems, relying on thriving forests, grasslands, wetlands, and agricultural landscapes to survive.

Observed every year on 4 August, highlights the vital role these remarkable birds of prey play in maintaining ecological balance. By controlling populations of rodents, insects, and other small animals, owls help keep ecosystems healthy and resilient.

Yet many owl species face growing threats from habitat loss, road accidents, pesticide use, illegal wildlife trade, and harmful superstitions. Each of us can make a difference by protecting their natural habitats, safeguarding nesting sites, supporting responsible conservation, and helping dispel myths through awareness and education.

The solitary and shy Indian muntjac keeps an eye behind while foraging, always alert to the slightest hint of danger. Its cryptic colouration blends seamlessly with the forest surroundings, allowing it to remain perfectly camouflaged in its natural habitat.

“Tekode”
(Thunder Mushrooms)

Some of the most anticipated flavours of the monsoon never make it to markets and cannot be cultivated. They appear only after the season’s first heavy thunderstorms.

Across the forests of Maharashtra, local foragers eagerly await Tekode, also known as Alimbi or Thunder Mushrooms. Almost overnight, these wild mushrooms emerge from the forest floor, nourished by rain and thunder.

Foraging them is a tradition passed down through generations. It also demands deep knowledge, as many edible mushrooms closely resemble poisonous varieties. Even experienced foragers collect them with great care.

The villagers around Svasara Jungle Lodge, along with members of our local team, gather these seasonal mushrooms for us. In our kitchen, the harvest is transformed into a simple Tekode Chi Bhaji, prepared with just a handful of local ingredients so the delicate, earthy flavour of the mushrooms remains the star of the dish.

Tekode cannot be cultivated, stored, or refrigerated for long, making it one of monsoon’s most fleeting delicacies!

p.s. Never consume wild mushrooms unless they have been identified as safe.
