Gin & tonic wasn’t always a party favourite.
It was survival.

Then came the ice,
carried across oceans to Kolkata,
turning necessity into a pleasurable ritual.

Quinine for the mosquitoes,
gin to make it bearable,
ice to add the chill,
best taken at sundown.

At the Glenburn Penthouse,
we’ve softened the story a little,
with rose-petal infused tea and a cocktail that’s now a firm favourite.

Chef Prasenjit: The man, the myth, the menu.

Many of Calcutta’s monuments celebrate triumph.
But some ask us to pause, and question.

With Husna-Tara, guests step into one of the city’s most debated and emotionally charged edifices, the Black Hole Monument, linked to the events of 20 June 1756, when the old Fort William fell to the forces of the young Nawab of Bengal Siraj-ud-Daulah.

That stifling hot Summer night, British prisoners of war were confined in a small guardroom within the fort, recorded as roughly 18 by 14 feet, with minimal ventilation and only two small windows.

One survivor, John Zephaniah Holwell later claimed that 146 captives were forced inside, of whom 123 died from suffocation and heat.

Modern historians, however, widely question these numbers and even aspects of the narrative itself, suggesting the count was likely far lower, and that later colonial retellings amplified the tragedy to justify British expansion in Bengal.

What remains undisputed is that the episode, whether mythologised or real in its scale, profoundly shaped colonial memory and became a turning point in the political fate of Calcutta, prompting Robert Clive to plot and plan the pivotal Battle of Plassey.

Standing here today in a hidden corner of St John’s Church, the monument is less an answer than a question:
about history, perspective, and how stories are told.

The Glenburn Penthouse in collaboration with Gormei played host to some very special evenings all through 2025 - Menus and food experiences presented by chefs we admire - showcasing their distinctive cuisines and telling their own personal stories.

Helmed by brilliant chefs like Chef Katherine Lim ( ), Chef Ish*ta Rai Dewan (.0 ), Chef Devyani Bhatnagar ( ) Chef Amrita Bhattacharya ( ), and Glenburn’s very own Shaun Kenworthy , each Glenburn-Gormei curated evening was about bringing people together over food and the stories that shape it.

Thank you for taking a seat at our table.

Winter, in Ladakh.
Stories, in every mouthful.

At the Glenburn Penthouse, we welcomed a rare Gormei Ladakhi Winter Dinner by Chef Jigmet Mingur, where charcoal-fired khambir, nettle stews, handmade pastas, morels and seabuckthorn came together in a menu shaped by mountains, memory, and monastic beginnings.

Paired with Ladakh-inspired cocktails, and conversations that lingered long after the last course, it was an evening of slow food, quiet wonder, and deep-rooted traditions.

A monk who became a chef.
An evening that honoured his journey.
