Here’s a peek into the process. In this region, the rice beer is manufactured mainly by the Karbi community, often at home by the women. Also known as Xaj, it is a drink usually had on occasions like Bohag Bihu or the Assamese New Year, which was recently celebrated.
Rice is steamed and mixed with a starter cake and fermented to make the beer. Flavours are added with herbs and flowers, or fruits. The best part is, you can see this happen right in front of you. During your stay, ask for a guided village walk to meet the locals and learn more about their day-to-day life. You also get a chance to sample the rice beer on this walk.
