QUBULI PULAO

Qubuli Pulao is one of Jodhpur's most distinctive culinary traditions, with its origins rooted in devotion rather than royalty. The dish is believed to have been created as an offering (prasad) at the Shanichar Temple by the owner of the renowned Pokarji Sweet Shop way back in 1965.
Wanting to prepare a savoury offering instead of the customary sweets, he gathered the ingredients readily available in his shop—rice, yam, potatoes, some English vegetables and grapes—and cooked them into a fragrant pilaf. The dish was finished with generous spoonfuls of clarified butter and topped with crisp, clarified butter-roasted bread chunks, adding richness and texture.
The offering quickly gained a devoted following, and people began visiting the temple specifically to receive this unique prasad. Its popularity eventually led to the dish being served commercially at Pokarji Sweet Shop, where it continues to be one of Jodhpur's most cherished local specialities.
Simple in its ingredients yet deeply comforting, Qubuli Pulao remains a reminder of how faith, ingenuity and everyday pantry staples came together to create a dish that has stood the test of time
