The chefs, with an experience of over 21 years with premium hotels, cruise lines and restaurants in India and abroad are well versed in multiple cuisines, latest culinary technologies and food safety standards. s speciality is Malabar Biriyani—unique for its indigenous use of the short-grain fragrant rice, “Kaima” and the perceptive use of spices. “Pandaris”, the traditional Moplah cooks, prepare the Biriyani strictly on wood-fire with a slow finish on embers, so as to let it mature and develop its distinctive notes. In Pipli’s kitchens, fresh herbs, the finest spices, choice ingredients and traditional methods are used to make the Biriyani a genuine and extraordinary dining experience.
